Ingredients 3 1/3 C. Flour 3 C. Sugar 2 tsp Baking Soda 1 1/2 tsp Salt 3 tsp Cinnamon 3 tsp Nutmeg 1 tsp Ginger 1 C. Salad Oil (vegetable oil) 2/3 C. Water 29oz Canned Pumpkin 4 Eggs *optional 1 C. raisins, cranberries and/or pecans
Instructions
Preheat oven to 350. In a stand mixer, mix pumpkin, oil and water together on low, add sugar and seasoning. Add baking soda and salt, then mix in flour 1/2 cup at a time until blended smoothly. Add eggs one at a time, mixing until smooth after each. If desired, fold in optional ingredients. Using butter and flour (or flowered baking spray) coat the inside of 3 medium loaf pans (or 7 small loaf pans) Fill loaf pans 2/3 full and bake for 60 minutes at 350 (40 minutes for small loaf pans) or until toothpick inserted comes out clean.
